Delicious (and easy) Pot Stickers Recipe

Yesterday was our last day visiting family so to end the week off on a fun note, my mom and I went to a healthy cooking class led by a wonderful and extremely healthy Korean couple, the Kims. My mom and sister have been attending this class for a few months now and have learned some very healthy, delicious, and complex recipes so I was intrigued (but nervous) to see if my novice cooking skills could keep up. This week we made authentic and delicious vegetarian pot stickers that turned out to be much simpler than I could have imagined!

Ingredients:
Wonton Wrappers
2 cups Steamed Cabbage – drained and chopped
2 Egg Yolks (save the whites)
1 cup Carrots – chopped
1 cup Green Onions – chopped
1 cup Extra Firm Tofu- drained
1 cup Shiitake Mushrooms- drained and chopped
1 cup Small Granular TVP (texture vegetable protein)

Have I lost you yet? Well let me reassure you that I do not like cabbage, onions, mushrooms, or tofu (which are all key ingredients) and yet I loved these pot stickers, once made, all the veggies mix really well together and you can’t taste the tofu or TVP (I promise)! All of these ingredients can be found at a natural grocery store and you can substitute in different vegetables, add a little bit of cooked meat, or even just use a package of coleslaw mix if you’re feeling too lazy to chop.
Pot Stickers

Step 1: Mix the tofu and TVP together and let soak for 15 minutes or longer.
Step 2: Mash all of the ingredients together (except for the won ton skins and egg whites) and season with salt, pepper, garlic powder, and sesame oil.
Step 3: Put a spoonful of the mixed ingredients in the middle of the won ton wrapper (on the unfloured side).
Step 4: Lightly dip the edge of the wrapper into the egg whites.
Step 5: Fold wrapper into half moons (or triangular shape if you have square wrappers) and seal shut, leaving a tiny air hole in one corner.

The great thing about these potstickers is that they freeze really well so you can make a large batch ahead of time then just thaw and cook them when you’re ready. Also, you can use the extras in my Healthy and Delicious Dumpling Soup Recipe.

Step 6: Line your pan with ghee (jar for $13 on Amazon) or other oil and place potstickers around rim of pan leaving a space in the middle. Cook on medium-high heat for five minutes until the side is golden brown.
Step 7: Flip the potstickers onto their other side then add a tbsp of water into the middle of the pan, cover with a lid, and leave until the water had been evaporated (around 5 mins).


These are already delicious plain but you can serve them with soy sauce, sweet & sour sauce, or with the Kim’s sesame sauce.

Sesame Sauce
2 Tbsp Braggs Aminos (soy sauce)
1 Tbsp Vinegar
1/2 tsp Agave Nectar
1/2 Tbsp water
1/8 tsp sesame oil
1/8 tsp cayenne pepper
1/8 crushed roasted sesame seed

You can print this authentic and delicious potstickers recipe here. It sounds a lot more intimidating than it actually is, the hardest part is the chopping which you can save time on by using a food chopper. This recipe would be the perfect activity for a date night, girls’ night in, or family night because it goes by much quicker with more hands plus it’s fun to try and outdo each other when molding the pot stickers into fancy shapes!
