French Toast Casserole Recipe

Breakfast is my favorite meal of the day and I could eat breakfast food for dinner all week long! One of my favorite breakfast dishes is french toast (oh nom nom) but it can be so boring, it’s basically just toast with sugar on it. So I went on the hunt for a way to liven up the dish and I stumbled upon a healthy(ish) alternative that uses Ezekial cinnamon raisin sprouted bread and is made into a casserole that can be prepped a day in advance. Since you need to refrigerate for 8 hours, I recommending making the french toast casserole the night before and just pop it in the oven when you wake up.

Ingredients:

  • 12 slices Ezekiel cinnamon raisin bread (depending on size of pan)
  • 1 ¾ cups almond milk
  • 7 eggs
  • 1 tbsp vanilla
  • ¼ tsp sea salt
  • ½ tsp nutmeg
  • 1 tsp cinnamon
  • ½ cup blueberries
  • 1/2 cup raspberries
  • ½ cup chopped walnuts

Instructions:

  • Beat eggs, milk, vanilla, sea salt, nutmeg and cinnamon together in a bowl
  • Grease a large baking dish (9×13) with butter or oil
  • Place 6 slices of bread down into dish
  • Top bread layer with half of egg mixture
  • Layer half of the walnuts, half of the blueberries, and one of the sliced apples on top
  • Repeat this process ending with apples, blueberries, and walnut on stop
  • Refrigerate dish overnight or at least 8 hours

  • When ready to bake, preheat oven to 350 degrees
  • Bake dish for 30-40 mins covered with aluminum foil
  • Serve with extra berries, butter and hot maple syrup or frosting

This french toast casserole recipe is super easy to make and is perfect if you’re hosting overnight guests. It can also be easily adapted to whatever toppings you’d like, I’ve made it with apples and blueberries before and it was delish! Let me know if you give it a try!
